Super Calzones



I found this recipe at allrecipes.com, but made a few changes. I added red peppers and fresh mushrooms instead of the can it calls for. I also added sausage with the hamburger, mostly because I didn't have enough hamburger and adding sausage made a 1/2 pd. I used mom's home-made bread recipe in place of the pizza dough. It turned out really good, but next time I'll try without the sausage. The sausage was overpowering. Fernando and I liked it, but in order to taste all the other spices and vegetables, we'll take it out for next time. I also used Ragu in place of tomato sauce, which ended up tasting fine. I also didn't put olives in. I'm not a fan of olives and it was delicious without them.

Ingredients:

1/2 pd. ground beef
2 Tbsp finely chopped onion
2 Tbsp finely chopped green pepper
1 garlic clove, minced
1(15 ounce) can tomato sauce
1 tsp. Italian seasoning
1 (10 ounce)can refrigerated pizza crust
1 (3 ounce)packaged cream cheese, softened
1 cup shredded mozzarella cheese
1 (4 ounce) can mushrooms, drained
1 (2.25 ounce) can sliced ripe olives, drained

Directions:
In a skillet, cook the beef, onion, green pepper, and garlic over medium heat; drain and set aside. In a sauce pan, bring tomato sauce and Italian seasoning to a boil. Reduce heat; cover and simmer for 5 min. Stir 1/2 cup into the meat mixture; keep remaining sauce warm. Unroll pizza dough on a floured surface. Roll into a 12 inch square; cut into four squares. Spread cream cheese over each to within 1/2 in. of the edges. Top with meat mixture. Sprinkle with Mozzarella cheese, mushrooms, and olives. Fold dough over filling, forming a triangle; press with a fork to seal. Place on a greased baking sheet. Bake at 400 degrees for 20-25 min or until golden brown. Serve with remaining sauce.

Momma Anderson's Home-made bread


My mom made this recipe a million times growing up. I loved it every time. I've made this recipe quite a few times and the love for it never ends.


1/2 cup warm water
2T yeast

set aside

meanwhile in bread mixer:

5 cups hot water
7 cups flour (white or wheat)
2/3 cup sugar
2/3 cup oil
2 T salt

mix together and add yeast mixture

Add approximately 5 cups more flour (or however much you need to get the dough to not stick to side of bowl). Mix ten minutes. Knead and put in pans and let rise for 30-45 minutes.

This recipe works great for whole wheat bread too and I never have to add anything special like some recipes call for when making wheat bread. Usually I make it using all wheat with a couple cups of white flour. For a real treat - all white flour is delicious! (pictured is half white half wheat bread)

Bake at 350 for 25-30 minutes or until golden brown. Yumm yummm

Valentines Sugar Cookies or any holiday for that matter



I found this recipe at allrecipes.com. It turned out great! I've always wanted to make sugar cookies that are more fluffy than crunchy. FOUND IT.

Ingredients

1 1/2 cups butter, softened
2 cups white sugar
4 eggs
1 teaspoon vanilla extract
5 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
Directions

In a large bowl, cream together butter and sugar until smooth. Beat in eggs and vanilla. Stir in the flour, baking powder, and salt. Cover, and chill dough for at least one hour (or overnight).
Preheat oven to 400 degrees F (200 degrees C). Roll out dough on floured surface 1/4 to 1/2 inch thick. Cut into shapes with any cookie cutter. Place cookies 1 inch apart on ungreased cookie sheets.
Bake 6 to 8 minutes in preheated oven. Cool completely.
