Mexican Tinga Tostadas

I never had these before, but Fernando surprised me with this recipe. They were YUMMY and spicy. You don't have to add as much spice if you don't want them spicy or you can add more if you love the spice.

Ingredients:
2 Tbsp olive oil
1 large onion, cut into rings
1 (15 oz) can stewed tomatoes
1 (7 oz) can chipotle peppers in adobo sauce
2 pds. shredded cooked chicken meat
1/2 cup sour cream
Tostada shells

Directions:
1. heat olive oil in a saucepan over medium heat. Add onions, cook and stir until softened. Meanwhile, puree the tomatoes with chipotle peppers in adobo sauce to taste. Pour into the onions and add chicken. Cover and simmer for 20 min. Put it on top of tostada and enjoy.
