CHICKEN IN BASIL CREAM
1/4 cup milk
1/4 cup dry bread crumbs (I used Italian bread crumbs)
4 boneless skinless chicken breast halves
3 tablespoons butter
1/2 cup chicken broth
1 cup heavy whipping cream
1 jar (4 oz) sliced pimientos, drained
1/2 cup grated Parmesan cheese
1/4 cup minced fresh basil
1/8 tsp. pepper
Place milk and bread crumbs in separate bowls. Dip chicken in milk then in bread crumbs. Put in a skillet and fry in the 3 tbsp butter. Cook on both sides until finished. Remove and keep warm. Add broth to skillet. Bring to boil. Stir in the whipping cream and pimientos, boil and stir for one min. Add the Parmesan cheese and
pepper. Pour sauce over chicken. Yield: 4 servings

It was yummy and super easy. I made it with rice and a green salad.
